I need to find out how much of the following i need to make curry for 250 people:

1. chicken
2. pumpkin
3. potato & Channa
4. Mango

Serious thing here, i was asked to source the ingredients for a fund raiser for someone who needs surgery, 8-)

s it a one serving per person? buffet style or pre-boxed servings?

30 lbs pumpkin

50 lbs potato

8 lbs channa

100 mangoes

2. pumpkin - 30 large
3. potato - 2 large wholesale sacks (some tend to be rotten)
4. Channa - 1/2sack (when u soak them they double up in size)
5. Mango - 100

pressure, that is real plenty to waste.

better get an average from someone who owns a catering service or who cooks for weddings (dem ole indian tanty could handle this brisk.)

cut the chicken in small pieces like the roti place on the highway,
you can make 1 chicken serve 8 people
so you only need 30 or so, lol
load up on the pumpkin, it cheaps

32 chicken should be enough
gives you 128 quarters and a quarter should be able to serve 2 people when cut up for curry which gives you 256 servings

for extra you can go up to 40 chicken as when cooking in large quantities sometimes the chicken is over cooked and falls apart and you will need to serve a little extra

2 sacks potato and 1/2 sack channa sounds about right

cook them together to stretch the servings

between 20 to 30 pumkin depending on the size but usually a serving is just a spoonfull so 20 mediaum may be sufficient

mango can be cut into 6 peices so at 250 boxes leaves you with around 42 mangoes but 50 should be enough as a serving would be a 1 piece mango/seed and sauce


suggest re checking thes figures with a few different caterers to get a final figure

keep in mind its a fund raiser and not a dinner so servings sizes need to be rationed but at the same time not too little
