Thats applewood... chunks are available both at bagwansinghs and allied on the cross. Check blooms for the meat

Leftovers from last night... At the risk of sounding like someone who regularly posts questionable menus, here we go... Pics included of the cook and final products.

Sugar cane smoked boneless lamb leg, sauted kale with cranberries, dinner rolls, hasselback potatoes, rosemary potatoes, dinner rolls, tomato and cucumber.

Plus wifey make some fried rice and veges forvtoday but no pics of dat.

I need to ask what is the reason for rockin' two thermometers 18" apart? I can't imagine that air plenum has much of a temperature differential.

Symmetry, plus at time of build, I wanted to know the temperature profile for the pit to ensure eveness of temperature for a cook.

^Man, not sure I posted this before, but had sada and tomato choka fairly recently after coasin' on it forever. Best decision ever.

Who knew tomatoes and a few other simple ingredients could lash that hard?

Barbecue Dolphin (Mahi Mahi) and Sword de Fish, creamed potatoes with freshly squeezed garlic infused with thyme, gently sautéed snow peas , broccoli with carrots in a divine sauce - olive oil with basmatic vinegar . Boiled baby corn and assorted grill vegetables, fresh tomatoes spinach salad with orange peppercorn dressing. Corona Beer with lemon wedges , Passion de Fruit Juice , Coffee and Flan for dessert .

Of course my Smokey brother ..

#1 Cream Potatoes :

Idaho potatoes boiled and crushed - use a potato masher.
Add full cream milk , a lil cheese and lil sour cream (mixture)
Quick 2 mins sauté of garlic in olive oil with lil ginger and thyme (sauce)
Combine mixture with sauce . Add bacon bits and sprinkles of parsley.

#2 Broccoli & Carrots .

Baby carrots and broccoli in a steamer 5 mins.
Put in bowl then add olive oil, lil salt, black pepper mix .
Vinegar on the side . Slight sprinkle. Thin fresh orange slices optional.
Both vegetables must be crisp in texture .

Enjoy .
