This question is for persons who does smoking of meats?

1) smoking with charcoal vs. gas. Which one is better with respect to the ease of use and flavor
2) weber smokey mountain any feedback ; what size u have
3) anyone experimented with local wood chips

P.s. Apologies if this previously discussed; but I searched the thread and only found similar discussions for grilling. charcoal was the winner

Wsm is one of the best charcoal smokers ever made,
I had one until i built a big gas powered vertical smoker.
Charcoal not so cheap anymore though and messy to cleanup.

A proper gas smoker should have the chips burning in a way which will generate a proper smoke ring
Some of the little gas smokers dont do this as they just barely get the chips smoking but not burning.

finally bought my first gas grill and want to convert it from propane.

is there anywhere I can get a 20lbs tank besides having to go to NP in sealots?

Yeah checked them already they only do refills.

Looks like is either sealots or finding someone who has an extra one to sell...

Simple way is just to cut off the existing propane gas head and put in the lpg gas head with a hose clip. But i find it was always difficult to connect the new tank cuz the existing hose was like 2 feet long. I bought a 6 foot piece of gas line n replaced the whole thing. The clip on the existing hose was crimp on so that took some effort to remove....

Ok thanks. Thought it was that simple but while researching it I came across full conversion kits that looked way too complicated. So jus wanted find out first to be on the safe side...

reading some of the reviews on amazon would make me think twice about buying tho

i really want a nice big grill to leave outdoors with a side burner

If you have a kitchen aid stand mixer than massy stores has the attachment for grinding and stuffing sausages

Thanks, I don't have a kitchen aid. I was looking for one like hand crank mills used to grind dhal. It won't be used used very often.

You can use a food processor to mince meat. Just make sure you remove all the bones. But you can get any texture you want with pulsing. I have made mince lamb this way and it works well enough.

you can get those by iam in trincity...I bought the plastic type off amazon and it works pretty good for home use...you will hav to order the sausage casings or visit someone who sells raw pudding for the intestines. ..

Has anyone seen Wood Smoking Pellets locally ? I'm using a Masterbuilt electric smoker.

Bhagwansingh's in piarco has a wide variety of wood smoking pellets, different sizes, types of wood from different trees etc.

thanks, pellets or wood chips can be used. I personally dont like the wood chips because i forget to soak them almost every time. Smoker model is 20077915, i emailed master to see what they recommend.

Soaking is not necessary
You won’t get much of a smoke ring with electric compared to a smoker which actually has combustion

no smoke ring with the electric is correct, I also have one of those char broil side smokers I keep drying out the meats when i use it, i think the temp is off so I will replace the stock thermometer with two longer thermometers and see how that works.

those charbroil smokers with side box are toy grade and tbh dont really hold temps consistently or for any length of time(>2hrs)
they are really a marketing gimmick off the larger smokers which use that design but have a much bigger firebox for proper controlled wood/charcoal burn.

post some data on what meats you smoking and temps etc
I've been down this rabbit hole pretty bad.

Masterbuilt recommends using woodchips in the electric smoker. It recommended not to use pellets because they burn hotter and may cause a fire.

Mostly smoke pork butt and ribs, chicken. I will try rabbit, goat, Pigs head and wild meat this Christmas.

We have a small group of people that get together a couple times for the year to BBQ and smoke meats.
