I'm leaning more towards changing the fuel pump because I heard that a failing fuel pump causes hard starting too. And well I get really bad acceleration and loss of power when going uphill so that could be the cause of this too.
I just don't want to change/fix things that doesn't need fixing and I'll end up wasting money yet again

If it slightly easier to cold start when you have a full tank of gas then it's the fuel pump for sure.

I didn't check it when the tank is completely full but if I prime the fuel pump (turning on the ignition for a few seconds) it starts easier.
This morning I didn't prime it at all and I heard a grinding noise when I attempted to start it. Then I primed it after and it started but it took long as usual.

In my experience, when pumps fail you won't get good idle and in most cases you won't even be able to crank. If the regulator was bad then you would get ridiculous gas consumption on both sides of the scale. There are many simple things that can cause your issue as well as more in dept ones.
