As we on steaks who has a good beef roast cut i looking to throw somthing in the smoker this week

you can never go wrong with a beef brisket, classic beef for smoking but only comes in large sizes

a smaller cut which does well smoked is the culotte/picanha
Blooms has them about 2lbs each and $150 or so
doesn't need to smoke for 12 hrs, 4-5 and good to go

I plan to experiment with smoking chuck sometime soon for the xmas

chuck aka chuck roll, shoulder clod is cheap, imported whole(15+ lbs) and
normally cut up in cubes by the local supermarkets
tried once before but didnt achieve desired results as I smoked in a normal way
gonna foil next time

Stopped eating beef a while ago, but when I order lamb, I like it medium / medium rare.
I ask for it, and always get well.

If you ask for well done, you get rubber slipper char.

A regular kitchen meat thermometer nothing special,
I have to give thanks for the info on finding Blooms though, you have to start with good ingredients
Next is Paul A Grant but for cuts not from Resturant.

Plus I seasoned my cast iron pot for the first time, well it was interesting and must say made a difference.

Both were Ribeye but one was dry age at $168.80 and the other was cowboy French cut at $175.45

As someone who has never eaten Beef (but takes a keen interest in the culinary)............is it (steak) really that good??

Yes boy. Once it is a good cut and cooked properly, that is, medium rare, it has amazing flavor and soft melt in your mouth texture. Tougher cuts require more skilled cooking for that result.

Went Blooms today and bought the same dry aged and French cut. They also have grass fed ribeye that's halaal, for those looking.

Post your findings pls... curious to know if freezing affects the taste of that dry aged.

Depends on the cut and quality of the meat. Probably started eating the stuff about 2 years ago. Most of the cheaper generic stuff tasted kinda bland to me, but I kept sampling around to develop some kinda baseline and to see if it's an acquired taste.

It seems like you get what you pay for.. the best and most flavourful stuff usually cost more. And for those times...... yeeaaaahhhh it's that good!!

some of the most flavorful beef are not the most tender
muscles that work a lot always have more taste but not so tender

eg skirt steak is one of the best tasting pieces of beef, flank is similar type
beef brisket which is the classic smoked beef is probably the toughest part of the animal(chest muscle)
moves the leg and hence has good flavor too
unfortunately those cuts now calling premium price too

one of the strongest flavor that everybody should try is hanger steak, muscle off the lung diaphragm
blooms occasionally has it
