I have a home espresso machine (Dedica Delonghi), and it extracts at 92c. That's around the temperature which most of those commercial ones do. Anything lower and you won't get a proper extraction.

If anything those machines are probably slightly higher, at 93-94c since they are solid, heavy robust machines which have a boiler dedicated to keeping the temperate at a specific level and flowing throughout the machine to keep every part warm.

If you're getting a double shot of straight up espresso and it's cold, then something is wrong.

If it's a drink with milk added (latte/cappuccino), then the problem is they are probably adding too much cold milk which isn't steamed long enough and brings the temp down too low when added to the espresso.

I think they're making the espresso correctly to the SCA recommended temperature of 90.5 to 96.1°C.
They have to serve it to customers at lower temp because of that case.

I must say, the expansion of Prestige Holdings may not be fantastic for everyone, but it certainly is great for the shareholders and anyone who has their pensions tied to the company's shares.

Saw some comments recently on social media about their profit reports, people I knew were venting and I replied to them well why not buy shares?

To be honest though, I much prefer a transparent, publicly traded, Mouttet-helmed coffee shop, than a stealthy, Arab-owned, private conglomerate.
