They should be able to connect any eSIM device, Apple Watch cellular included.

On your iPhone, open the Apple Watch app.
Tap the My Watch tab, then tap Cellular.
Tap Set Up Cellular.
Follow the instructions for your carrier. (That's if Digicel allows this yet)

But once Digicel does then whatever eSIM you have on your iPhone can be copied to your other cellular-capable Apple devices like your cellular apple watch and cellular iPad etc - that's how it works with the US carriers like AT&T, Verizon etc
I guess someone with a digicel eSIM on their iPhone and a apple watch GPS+Cellular can test it using the instructions above and see if it works
