I'll check out CAP.
I was checking out Cashier live, but in the review the guy said it lacks the future which a lot of other cloud based pos have, which is being able to operate without internet. The others had a small amount of memory in which you can still manage transactions and so.
On the whole, cloud based pos looks really appealing, but some (if not all) doesn't have deep employee integration. (as you say more targeting smaller retail businesses)
I have used cash register express in my old workplace, and i like the interface, everything is usually done really quick.
But we only had one terminal there, so im not sure how to set up a 2 terminal pos and have them link to each other to. (server?) i have little knowledge of server and database.
My budget is around $1000 US

At 1000USD you cannot you cloud based, as they charge per month and will exceed your budget by a 1 1/2 years. Another issue I came across is that if internet is not present the system will not start (NCR Silver is an example) but I think a fix is on the way.
Most POS systems will exceed your budget. A simple quickbooks POS is about 3000USD IIRC
